How can I tell if my Vulcan griddle thermostat is off?

Use a surface thermometer at several spots across each zone after it has preheated. If one zone reads well above or below its setting, the thermostat may need calibration or replacement. A clogged burner can cause similar readings.

One burner on my Harrisburg island cooktop keeps clicking after it lights. What causes that?

Usually moisture or residue on the igniter, or a burner cap that is not seated flat. Let it dry fully and reseat the cap. If the clicking continues, the switch or spark module may be at fault, which we can test and replace.

These units sit on equipment stands or counters along a cook line and run for hours at a time, often with heavy grease load. Many gas models use standing pilots, and griddles frequently have thermostatic controls for each burner zone.

Island cooktops and remodeled counters

Kitchens in the newer subdivisions often put a gas or glass cooktop in the island, with the wall oven elsewhere. Gas burners that click without lighting usually have spill residue on the igniter or a misaligned burner cap. Radiant glass tops more often lose a single element, a switch or the hot-surface indicator. Induction units add a power board and cooling fan that can fail after a surge.

In older Concord homes, cooktops are sometimes squeezed into counters cut for a different model, and wiring or the gas connection can be tight underneath. Before calling, make sure burner caps are seated, wipe the igniters dry, and check the breaker. If you smell gas, turn the burner off, leave, and call the gas utility or 911.
